Balsamic Roasted Mushrooms

Herby Kale Mashed Potatoes

  • 2 lbs. russet potatoes ($1.08)
  • 6 oz. kale, chopped ($1.68)
  • 1 Tbsp olive oil ($zero.16)
  • Three/four tsp salt, divided ($zero.04)
  • 1/2 cup bitter cream ($zero.45)
  • 1/2 cup milk ($zero.17)
  • 1 tsp dried parsley ($zero.10)
  • 1/2 tsp dried oregano ($zero.05)
  • 1/2 tsp dried basil ($zero.05)
  • 1/four tsp garlic powder ($zero.02)
  • 1/four tsp onion powder ($zero.02)
  • freshly cracked pepper ($zero.02)
  • Preheat the oven to 400ºF. Wash the mushrooms and reduce them in half if they’re massive.

Balsamic Marinade for Mushrooms

Preheat the oven to 400ºF. In a small dish, stir collectively 1 Tbsp olive oil, Three Tbsp balsamic vinegar, 1/2 Tbsp brown sugar, 1 Tbsp soy sauce, 2 cloves of garlic (minced), and 1/four tsp dried thyme.
