    This is beautiful in its simplicity! I dashed to the kitchen, where I discovered a paucity (a big word I know) of shredded cheese. So I took three slices,Montery Jack, Swiss, and cheddar, and diced them up. I made a little lagoon in the middle, thinking I'd be smarter than the average chef. Alas, my lagoon setup melted. But hurrah! because I chased that yolk back in the middle anyway.

    I literally just made this and OMG it was life changing!!! I buttered the bread and put the fried egg and cheese on top 🙌🏻🙌🏻🙌🏻

    To keep the yolk in the center I waited for the white to cook a few minutes then gently pushed the yolk in the middle. Then I covered with a bowl just to cook the egg faster and uncover and cooked for another few minutes.
